My experience was Marco was great - he works with you to create the best menu for you and was really accommodative to any changes, even up to 4-5 days before the event. Oh, and the food was fantastic. We had a dinner for 10 people that we wanted catered, but not served… Covid safety reasons. Marco was willing to do this, and delivered the order as well to the house. We had his signature salad, which was both unique and delicious, and highly recommended to try something new (truly, give it a shot). Vitello Tonnato was up next - if you know you know… his was great and came with crostinis which were delicious. We had a pasta dish which he cooked last from his kitchen in order to have it arrive hot and as fresh as possible. We all appreciated this attention to detail… which was really evident with every dish. We had fish cartoccio - the one thing we ‘cooked’ ourselves. He provided individual fish filets, raw, with white win, cherry tomato, and basil which were each wrapped in parchment paper and foil. All we had to do was put it in the oven for 15 minutes and it came out amazing. We both determined this was the best choice for us, though I’m sure some would rather fish cooked for them, this was so easy and worth the freshness. Side dishes were all delicious - greens and potatoes with home made sauces for them. Dessert we wanted a trifle, and Marco’s pastry chef made us a great one. Looking forward to seeing Marco and his colleagues again, and if you hire him you won’t be disappointed.

“I had originally intended to hire Marco for his private chef service but when I realised the need to host about 20 people at my in-laws on Christmas Day, I thought it was going to be preferable to have a prepared meal rather than a full-on service. Luckily for me, Marco was very happy to oblige and gave us outstanding food with very easy instructions on how to prepare it and offer the best experience on the day. Marco suggested an appropriate menu and worked with me to adjust it, even last minute, to take into account some allergy and dietary requirements. The food was spectacular and gave me the opportunity to savour a Christmas meal as per my hometown traditions in Italy, including ‘tortellini in brodo’, lasagna and an unbelievable braised lamb which had everyone asking for more. He also prepared for us some incredible starters (a super tasty seafood salad) and he was able to source some homemade desserts which were also loved by everyone. Salmone tartare, Grilled pineapple shrimp skewers, Octopus potatoes, Roasted duck breast...etc. just to name a few. The freshly made mushroom risotto and the Bolognese pasta were also a hit. What a success it was!!! The food was absolutely amazing (and plentiful). Everything was beautifully plated and delicious.
Standouts for me were the incredible charcuterie board and the crudo plate. But really, everything was great.
Chef Marco and his assistant were engaging but not overbearing. Sometimes they were making us laugh and other times we didn’t even know they were there. Everybody was able to relax and enjoy the night.
When everything was done, the kitchen was left sparkling and we were able to finish the night without worrying about cleaning everything up.
This was our first time working with Chef Marco and I would definitely do it again. Highly, HIGHLY recommended.

🌟 Chef Marco: Bringing the Flavors of Italy to a Canadian Christmas 🌟
For the third year in a row, Chef Marco’s Christmas menu brought the authentic flavors of my hometown, Fabriano (Marche region, Italy), straight to our family table in Richmond Hill, Ontario.
The standout dishes were a testament to his culinary expertise:
Two incredible lasagna variations – one with mushrooms, rich and earthy, and a traditional one with pork sausage (à la Vincisgrassi); both lasagne beautifully captured the essence of this iconic Italian dish.
The meat dishes were prepared to perfection: succulent braised beef ribs, fall-off-the-bone lamb shanks, and flavorful ossobuco that left us all craving more.
The octopus was tender and perfectly seasoned, while the sides, including cabbage with potatoes and rapini, added balance and depth to the meal.
An abundant and expertly curated antipasti platter, featuring top-quality charcuterie and cheeses, set the tone for an unforgettable dining experience.
What made this meal especially memorable was the cultural bridge it created. Sharing these traditional dishes from my small Italian hometown with my wife’s Hong Kong-Chinese family here in Toronto was truly special. The antipasti and lasagna combinations were a hit with everyone, and the meal beautifully connected two distinct cultures through the universal language of food. It was fascinating to hear their thoughts on the differences between octopus cooked Chinese-style versus Italian-style.
The meal concluded with an exceptional tiramisu – light, indulgent, and perfectly balanced between coffee and mascarpone.
